Why We Love It

Avocados are a great source of lutein, a carotenoid that works as an antioxidant and helpsprotect against eye disease. They also contain the related carotenoids zeaxanthin, alpha-carotene and beta-carotene, as well as tocopherol (vitamin E).

Smoked salmon is a good source of protein, with more than 15 grams in each 3-ounce serving. It also contains B-complex vitamins, as well as vitamin D, magnesium and selenium.

Spinach is an excellent source of vitamin K, vitamin A (in the form of carotenoids), manganese, folate, magnesium, iron, copper, vitamin B2, vitamin B6, vitamin E, calcium, potassium, and vitamin C.


What You'll Need


30g Smoked Salmon
1 Cup x Spinach
1 x Sesame Seed Bagel
4 x Cherry Tomatoes
1 x Avocado
1 x Red Onion
1 x Tbsp Lemon Juice
1 x Tbsp Chives
½ x Tbsp Fresh Dill
¼ x Cup of Milk
1 x Tbsp Butter
1 or 2 x Eggs





Method


Half and crush avocado in a bowl and add lemon juice and chives. Chop half the red onion and mix with avocado. Season with salt and pepper and mix well.



Whisk eggs and milk together in a bowl.



In a large frying pan, heat oil over medium heat. Add spinach and tomatoes to the pan. Make sure they are washed beforehand and all excess water is shaken off. Cook in pan until spinach is wilted.


Wipe away excess oil from pan and heat butter. Add eggs and stir with a wooden spoon until eggs are scrambled, around 3 minutes.


Toast the bagel and spread the avocado mix on each half. Top with slices of salmon and sprinkle some dill. Add the scrambled eggs and tomatoes and spinach on top or to the side.
