Shortbread Cookies

Makes 25

This is a very useful recipe and it is all about shapes. Try making a sunflower - using a large daisy/ flower cutter shape, place raisins or a cherry in the centre before you bake them. After they are cool, pipe the edge of the cookie with yellow icing. Fix a wooden lollypop stick with a little icing to the back of the sunflower and allow to dry.

Ingredients List:

  • 170g white flour

  • 110g butter

  • 50g caster sugar

  • 50g melted chocolate

How to Do:

  1. Preheat oven to 180˚C / Gas 4 and line a baking sheet with baking parchment.

  2. Place the flour and sugar into a bowl and rub in the butter.

  3. Gather the mixture together and knead lightly.

  4. Roll out to 7mm thick and cut out shapes using round or heart shape cutters.

  5. Place on the baking sheet and bake in the oven until pale brown, approximately 12 - 15 minutes.Remove and cool on a rack.

To Serve:

Dip half the cookie or heart shape into melted chocolate and allow to set on baking parchment or sandwich 2 together with a little soft vanilla ice cream and strawberries.
