What You'll Need
1 Tbsp x Ricotta Cheese
1 Tbsp x Fruit Compote ( Jam )
3 x Ginger Nut Biscuits
Soften the ricotta cheese for a few seconds in the microwave. Philadelphia cream cheese would work well here either.
Mix the soften cheese with a jam of choice such as strawberry, raspberry or blackberry which would all work well.
Use digestive biscuits or ginger nut biscuits and simply spread the mixture on top. The biscuit will naturally get a bit softer and the topping will firm up as the cheese cools. Sandwich with another biscuit for less mess or top with fresh fruit if desired!
