Why We Love It

Fussy eaters are the hardest to feed vegetables to! Anything that remotely resembles a vegetable is an instant turn off for them but with this soup, they'll have no idea that they are eating their veggies and they'll think it's delicious!

Carrots are proper supperfoods full of Vitamin A and also give you gorgeous skin, cancer fighting agents, and not to mention, good eye sight!

This recipe also contains cauliflower, which is an excellent source of vitamin C, vitamin K, folate, pantothenic acid, and vitamin B6.


What You'll Need



2 Tbsp x Olive Oil
1 x Large Onion
2 x Large Carrots
1 x Head Cauliflower
4 x Cloves Garlic
1 x Litre Chicken Broth
2 x Cups Water
1 Tbsp x White Wine Vinegar
Salt & Pepper to Taste
2 tspn x Herbs de Provence






Method


Heat oil in a large saucepan and add chopped onion. Cook for about 5 minutes stirring often. Add minced garlic and herbs and cook for a further 2 minutes, still stirring.


Add chicken broth and water.




Bring the broth to boil. Add chopped cauliflower and carrots.




Reduce heat, cover and simmer for about 35 minutes or until carrots and cauliflower are very tender..



Remove pan from heat and use a hand blender to puree until the soup is smooth.



Add the vinegar, salt and pepper and stir. Pour mixture into thermo flask in order to keep warm for lunch!
