Lemongrass Yoghurt Pannacotta



Learn how to make a delicious snack for any member of the family! This yogurt is an excellent snack that's sure to excite even the pickiest of kids.

Serves 4


Ingredients

  • 185ml cream  
  • 55g caster sugar
  • 1 lemongrass stalk – split into 2
  • 1 ½ leaves gelatine
  • 250g low fat yoghurt

Method:

#1: Place the cream, lemongrass and sugar in a saucepan over a medium heat.


#2: Stir until the sugar is dissolved, then just bring to the boil before removing from the heat. Remove the lemongrass stalk.


#3: Soak gelatine in cold water until soft. Squeeze out the excess water and drop the gelatine into the hot cream mixture and whisk until dissolved.


#4: Add the yoghurt and whisk until smooth.


#5: Strain the mixture through a fine sieve and divide between 4 x 125ml ramekins.


#6: Cover with clingfilm and chill for at least three hours or until set.

Now relax and enjoy some excellent yoghurt, a delicious treat for the whole family to enjoy, either as a dessert or even a mid-day snack!
